There are No Big secrets behind this best plantain chips recipe, but the fresh ingredients play a vital role in deciding its taste and flavor. Maintaining the correct temperature of the frying oil is another essential thing to note in this recipe. Traditionally, plantain slices would be fried in coconut oil. But athletic freaks can substitute it for any other cooking oil.

The plantains
The perfect spicy plantain chips depend on the quality of the plantain. The plantain should be firm enough to get sliced in the mandolin. The thickness of each slice must be even from the center to the sides. It should not become gooey while cutting, even in the center. If it turns soft or gooey after slicing, it is too ripened to make the chips. They may consume more oil and become greasy.
Do not get upset when you see the plantain's color. Raw plantain may look white to grey but turns yellow when fried in oil.
Peel the bananas when the cooking oil is heating. The plantain spicy chips should be made immediately after peeling, as they turn black when exposed to the air.
What are plantain chips?
This question may sound silly to some of you, but it is for others unaware.
Some of you might not know the difference between the banana and the plantains.
The bananas and plantains are different; a banana is a fruit that can be consumed raw. At the same time, plantain is a starchy substance and must be cooked, baked, or fried to eat. And this is something I like more, like a potato rather than a banana.
Plantains absorb all the flavors and the taste of the other ingredients added to them while cooking. They look green with thin skin and taste like tortilla chips. Plantains can be added to trail mix, consumed raw, or served with a dip. Enjoy munching them however you like.
How to store the plantain chips?
Once the plantain chips are fried, allow them to come to room temperature. Then, transfer the fried plantain chips to the container and let them stay good for a week on the shelf. Alternatively, you may refrigerate them in a sealed container for more prolonged use.
Frying the plantain chips
The flame must be in the medium throughout the frying process. The oil must be evenly medium hot and never smoky hot, as the chips get burnt immediately after getting into the oil.
I made spicy plantain chips with coconut oil, but if you prefer, you can use cooking oil or coconut oil and regular cooking oil in equal portions.
Salting the chips

The salt added to these spicy plantain chips differs entirely from other chip-making methods, and this is a tricky part of the whole recipe. This tip makes this chip stand out from any other recipe. It makes it possible to achieve deep-fried chips of professional quality.
Dissolve the salt in 2 tablespoon of water and keep it aside. The salt should dissolve entirely, with no granularity visible in the water. Once the chips in the cooking oil are done and the slices start turning crispy, gently drizzle half a teaspoon of the salt mixture over the cooking oil. The cooking oil will start sizzling; do not worry; it will stop after a few minutes.
Then, fry for another minute until the slices are evenly coated with salt. Drain them and transfer the salted plantain chips to the kitchen towel to remove the excess oil.

Spicy plantain chips
Ingredients
- 2 cups vegetable oil for frying
- 1 plantain
- ½ teaspoon salt
- 2 tablespoon water
- 1 tablespoon black pepper (ground)
Instructions
- Wash and peel the plantain. Using mandolin make thin even slices.
- Keep the slicer just above the hot oil, start slicing it. Make sure that the slices fall directly into the hot oil. Do not overcrowd the oil with the slices.
- Turn the stove to medium flame. Stir them occasionally.
- Make salt water by dissolving ½ teaspoon of salt to 2 tablespoon of water
- Add half a teaspoon of salt water to the pan.
- Fry Plantain Chips in slower flame further, till chips becomes stiffer and crispier. Store them in room temperature in airtight container.
- Fry till the plantain slices start getting crisp and firmer.
- Drain the oil well, and place them in the kitchen towel to absorb the excess oil.
- In a large mixing bowl, add the fried chips and ground black pepper. Toss until the pepper coats the chips evenly.
- Store it in the airtight container.
