Ingredients
1
cup
chickpea flour
/besan
1
teaspoon
red chili powder
¼
teaspoon
coriander powder
¼
teaspoon
salt
or as required
¾
cup
water

tablespoon
hot oil
for blending

vegetable oil
for frying
Instructions
Slice onion evenly about quarter inch thickness.
In a wide mixing bowl, add chickpea flour, red chili powder, coriander powder, salt, and water.
Make it thick flowing consistency batter.
To this, add sizzling hot oil, and stir vigourouslys to make the hot oil incorporated with the entire batter.
Over medium heat, place a pan and add vegetable oil.
Once the oil becomes medium hot, dip an onion slice to the batter, and drop gently over the oil.
Allow it to cook for 1-2 minutes and flip to the other side.
And cook for 1-2 minutes or until the crust becomes crispy and golden brown.
Serve hot with coconut chutney or tomato ketchup.
Notes
Adding hot oil to the batter is the secret here for the crispy, fluffy bajji.
