Chop baby carrots into bite sized small cubes, dice jalapeno. Deseed jalapeno, for lesser spiciness.
In a bowl add chopped baby carrots, jalapeno and lemon juice with salt.
Toss until all the ingredients blends well and serve.

Heat level. Seed jalapeno according to your heat tolerance capacity.Refrigerate. Transfer the leftover to an airtight container. This is good to use for up to 3 days.Freeze. Store them in air-sealed container or bags and store them in the freezer. These are good to use for up to 1 month. To thaw, leave them in the refrigerator overnight or for 8 hours. Or put the container in bowl water until it is completely thawed.
