Greek yogurt blueberry banana bread is the right recipe if you worry about ripened bananas sitting in your kitchen counter. This recipe is the best to make use of leftover ripen banana in a most enjoyable way.

This Greek yogurt blueberry banana bread, is absolutely delicious and I make very often in my kitchen. This recipe yields, soft and spongy, banana flavored with surprises of blueberries in between...yummy it is.

Blueberry Banana Bread-Soft and Moist Recipe

Somehow, I have addicted to the taste and flavor of banana bread. It is mild in sweetness, soft and moist, with visible traces of banana.

Being a mom, it was hurting me whenever I throw the ripe bananas into the trash bin. But after I tried this recipe, I started reserving bananas to get ripe.

If you like to add nuts, then add them as the topping before baking.

1. Preheat oven for 350°F. Grease and dust the baking tray.
Hint: For Grease and Dusting--Drizzle few drops of oil inside the baking tray, using hand spread it evenly to coat the pan. Then sprinkle flour and tap the pan so that the flour coats the oil coating of the tray.

2. Take to 2 ripe bananas.

3. Using fork gently  mash the banana. It is ok if there are little smaller chunks.

4. In a mixing bowl, add eggs and beat it until it becomes frothy.
Hint: Using my electric beater, I was beating it for a minute.

5. Then add all-purpose flour, baking powder, baking soda, greek yogurt, sugar, vegetable oil, ground cinnamon, and salt. Gently fold the batter and combine them well. Then add mashed banana and again give it a gentle fold.

6. Add ¾th Cup of fresh blueberries to the batter and reserve ¼th cup of berries for the topping purposes. Give it a gently fold one more time, so that berries spreads evenly to the batter.

7. Then pour the batter in the lined/greased and dusted baking tray. Drop the remaining blueberries over the top.
Hint: These dropping blueberries will the topping of our bread, so be creative it placing them.

8. In 350°F for about 30 minutes or until the inserted toothpick comes out clean.

  • 3 eggs
  • 2 cup all-purpose flour
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ¾ cup sugar light or dark brown sugar
  • ¼ cup vegetable oil /butter
  • ⅓ cup green yogurt
  • ½ teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ¼ pinch salt
  • 2 cups mashed banana ripen
  • 1 cup blueberry fresh or frozen

  • Gently fold the batter and combine them well. Then add mashed banana and again give it a gentle fold.
  • Add ¾th Cup of fresh blueberries to the batter and reserve ¼th cup of berries for the topping purposes.
  • Give it a gently fold one more time, so that berries spreads evenly to the batter.
  • Then pour the batter in the lined/greased and dusted baking tray.
  • Place the remaining blueberries evenly over the top.
  • In 350°F for about 30 minutes or until the inserted toothpick comes out clean.
  • Place it in wire rack to cool down to the room temperature.
