If you cannot bear the tanginess of the berries, then add more carrots. And if you cannot bear the heat of the jalapeno, then deseed them. This recipe is versatile and I love to have them in my sandwich, rolls, along with bread n rice, the list goes on and on and on.
How to make:
1. Wash and clean cranberries, carrots and jalapeno. Fresh cranberries are hard like a stone. Discard berries which are soft and spongy as they may spoil the salad. Choose carrots of your choice, if they are sweet, then its double bonanza.
2.Chop cranberries, carrots, and jalapeno in similar bite sizes. If you cannot bear the heat of the jalapeno/chili, deseed them. In a serving bowl, add all these chopped goodies along with required amount of salt. Combine them well and keep aside for 10-15 minutes. This resting time makes the carrots to absorb tanginess from the cranberries.
