It has been a long time, I'm waiting for posting this recipe. Whenever I get into the pasta isle in the grocery stores, lasagna sheets always impress me, I grab them as soon I see them.

Ground meat stuffing makes a wholesome dinner, but today I wanted to make something light. This meatless lasagna roll-ups recipe is great whenever you feel to go with a light dinner.

If you wish to cut down calories from this dish, reduce cheese quantity(Do you know I'm stressing the word 'reduce' here..? you cannot cut it down completely :). And also opt in for wheat or multi-grain pasta sheets.

How to make meatless lasagna roll ups

In a small mixing bowl, add Cottage cheese, Parmesan cheese, egg, and dried thyme.

Combine them well, so than egg blends well the cheese and no lumps are seen.

Cook Lasagna sheets as per the package instructions. Drain and spread in a tray.

Arrange the lasagna roll sheets in the backing tray to make delicious meatless lasagna roll ups.

Spread the egg mixture evenly over the lasagna sheets. Hint: If you wish spread marinara sauce over to the egg mixture layer.

Making the filling.

Start rolling each sheet. The rolls ups neither too tight nor too loose. It has to be firm, and that's the thumb rule.

Start rolling the meatless lasagna roll ups.

Repeat the process for the remaining sheets as well. And keep them ready for the next process.

Roll the lasagna sheet firmly.

In a baking tray, spread marinara sauce for about quarter-inch thickness. And place rolled lasagna sheets above it.

Start preparing.

Arrange rolled sheets as per the capacity of the baking tray.

Pour remaining marinara sauce over the rolled sheets.

Cover it with aluminium foil and bake it for 350°F for about 30 minutes, in the preheated oven.

Remove it from the oven, and sprinkle Mozzarella cheese, Parmesan cheese over the lasagna rolls. And bake it uncovered for another 5 minutes or until the cheese melts down.

Increase the cheese quantity as much as you like. And there is no restriction for the level of cheese here :).

Serve immediately, with your favorite toppings like chopped basil leaves, Goat cheese, Parmesan cheese, etc.

Few tips for getting into "How to make meatless Lasagna rolls":

  • Add marinara sauce over the egg mixture, to make it more juice and spongier.
  • Try adding fresh herbs instead of dried thyme.
  • Lasagna rolls along with egg stuffing can be made well in advance and can be frozen.
  • Whenever needed, thaw it to room temperature and bake it as I said in the recipe steps. Use homemade tomato sauce instead of marinara sauce.

    Hi! Is this for four or six lasagna noodles? The photo shows 6 but the recipe says 4!

    Well, I love pasta and your recipe is a pasta lovers delight. I also love simplicity in the kitchen for weeknight meals. I already have meat ragout in the freezer so now I just need to pick up some lasagna noddles and Monday's dinner is sorted.
