Fried plantain chips is a vegan dairy-free recipe. Perfect to serve with guacamole, or you may even add this to your trail mix.

Chips are the most wanted snack from the eastern corner of the world to the western edge. If you come up and call Potato chips as the King of the chips world, I could say 'Fried plantain chips' or otherwise called as 'Nendhiram Chips' as the Queen.

Deep-fried plantains are very famous for its secret hint of sweetness and saltiness.

About Fried Plantain Chips

Whenever our friends and relatives visit our neighboring state, they come back with huge packs of Plantain Chips.

There are No Big secrets behind this best-Fried plantain chips recipe, but the fresh ingredients play a vital role in deciding its taste and flavor. Maintaining the right temperature of the frying oil is another essential thing to be noted for this recipe. Traditionally plantain slices would be fried in coconut oil. But athletic freaks can substitute it for any other cooking oil.

The plantains

The perfect Fried plantain chips depend on the quality of the plantain. The plantain should be firm enough to get sliced in the mandolin. The thickness of each slice must be even from the center to the sides. It should not become gooey while slicing even in the center. If it turns soft or gooey after slicing, then it is too ripened to make the chips. And may consume more oil and would become greasy.

Do not get upset after seeing the color of the plantain. The raw plantain may look white to Grey, but it turns yellow after frying in the oil.

Make sure you peel the bananas when the cooking oil is getting heated. The Fried plantain chips should be made immediately after peeling, as it turns black when it is exposed to do the air.

What are plantain chips?

For some of you, this question may sound silly, but this is for others who are not aware of this.

Some of you might not be knowing the difference between the banana and the plantains.

The bananas and plantains are different where banana is a fruit and can be consumed as a raw. While plantain is a starchy substance and must be cooked, baked or fried to eat. And this is something I like more like a potato than the banana.

It has the potential to absorb all the flavors and the taste of the other ingredients added to it while cooking. Plantains look green with the thin skin. And it tastes something like tortilla chips. It can be added to the trail mix or can be consumed as raw or can be served with a dip. Enjoy munch it however you like.

Are plantain chips healthy?

According to me, any deep-fried snack is not healthy though the main Ingredients is healthy. The frying oil adds tons of saturated fat and may not be fit for everyone.

To cut down the calories, you may bake these plantain chips. Baking in 350°F in a parchment paper helps to cut down the fat. Otherwise, you may use the dehydrator or the air fryer to munch without any guilt.

How to store the plantain chips?

Once the plantain chips are fried, allow them to come down to the room temperature. Then transfer Fried Plantain chips to the container and stays good for a week on the shelf. Or on the other hand, you may refrigerate it in a sealed container for longer use.

Frying the plantain chips

The flame must be in the medium throughout the frying process. The oil must be evenly medium hot and never smoky hot as the chips get burnt immediately after getting into the oil.

I made the Fried plantain chips with coconut oil but if you prefer you make the plantain chips with cooking oil or you may also use coconut oil and regular cooking oil in equal portions.

The salting the chips

Dissolved salt in 2 tbsp of water and keep it aside. Dissolve the salt entirely with no granular seen in the water. Once the chips in the cooking oil are done, and when the slices start turning crispy, gently drizzle half a teaspoon of the salt mixture over the cooking oil. The cooking oil will it start sizzling, do not worry it will stop after a couple of minutes.

Then continue to fry for another minute, until the slices get evenly coated with salt. Then drain them and transfer salted plantain chips to the kitchen towel to remove the excess oil.

Ingredients

  • 2 cups vegetable oil for frying
  • 1 plantain
  • 1/2 tsp salt
  • 2 tbsp water

Instructions

  • Wash and peel the plantain. Using mandolin make thin even slices.

  • Keep the slicer just above the hot oil, start slicing it. Make sure that the slices fall directly into the hot oil. Do not overcrowd the oil with the slices.

  • Turn the stove to medium flame. Stir them occasionally.
  • Make salt water by dissolving 1/2 tsp of salt to 2 tbsp of water

  • Add half a tsp of salt water to the pan. 
  • Fry Plantain Chips in slower flame further, till chips becomes stiffer and crispier. Store them in room temperature in airtight container.
  • Fry till the plantain slices start getting crisp and firmer.
  • Drain the oil well, and place them in the kitchen towel to absorb the excess oil.
  • Store it in the airtight container.
