This Tandoori grilled chicken is super quick, spicy and incredibly delicious dish. Excellent to serve as appetizer or as a side, easy to make with few ingredients.

Perfect for quick dinners and beginners. Just mix the ingredients and place the chicken on the grill it, as simple as this.

The Grill need not be the fancy one to beautify your deck, it can be a simple one to fit on your kitchen counter.

The Ingredients

Tandoori spice mix. An authentic Indian spice mix, that is spice, flavorsome, and colorful. This spice blend can alone turns simple chicken to a finger licking taste. Feel free to use store bought ready to use mix. And making at home is easy as well.

Red chili powder. To increase the heat, and it can very well substituted with cayenne pepper or paprika.

Yogurt. This brings all the ingredients together, and acts as a meat tenderizer as well. I highly recommend adding this, as it helps the spice coats evenly.

What is Tandoori?

The spice mix made with Indian spices specially meant for grilling. The word 'Tandoor' refers to the special hot Indian grill, where the temperature inside will be above 500 degrees Fahrenheit.

You may make your own Tandoor masala with Indian ingredients. Making at home gives the convenience of customizing.

And this Tandoori spice mix is also available as readymade in the Indian stores or online stores in the United States.

A pocket would last for a year and we could use about 15-20 times of this quantity. There are many brands available for this spice mix, each slightly varies in taste.

How does this Tandoori grilled chicken tastes like?

From its deep red color, you can guess it very well, that the chicken is hot and spicy with all the refreshing Indian flavors. The chicken is soft and moist and the spices are rightly coated with the correct balance of taste.

We are adding yogurt in the tandoori marinade, which acts as a tenderizer and also gives a mild kick to the chicken, now you know why this Indian chicken is so popular.

Since you are making and you have full control over the spices, so adjust it to your choice.

How to make this Indian grilled chicken under 30 minutes?

Invest in a good countertop portable grill, I use cuisine art. And I'm happy with my decision. It's very convenient and easy to grill even in winter months.

Frozen chicken breast is more comfortable for a recipe like this. It also gives us the liberty of making as soon we crave for this spicy tandoori chicken.

This grilled tandoori chicken is all about enjoying popular Indian dish at home. Plus, you may also try making this over stove top as well.

Replace chicken with paneer(Indian cottage cheese), tofu, cauliflower, potato.

Serve with mint yogurt sauce or greek yogurt-cucumber sauce. Each side dish makes a whole new makeover, try enjoying with different condiments.

How to make Tandoori grilled chicken

You may use the storebought or a homemade version. If you are using the storebought masala skip the following and proceed to the marination step.

To make the tandoori chicken masala mix

Place the following ingredients in a microwave safe plate-2-inch cinnamon stick, 2 teaspoon of clove, 2 teaspoon of mace, 2 teaspoon of black peppercorn, 2 tablespoon of cumin seeds, 3 tablespoon of coriander seeds, 2 teaspoon of green cardamom, 2 teaspoon of black cardamom, 2 teaspoon of dry fenugreek leaves.

And microwave for one minute.

Allow it to cool and grind to a fine powder.

To the small mixing jar, to the above add 2 tablespoons of ginger powder and garlic powder. And store in airtight containers.

To make the marinade

In a mixing bowl, add chicken, yogurt, salt, red chili powder, tandoori chicken masala mix. Mix gently until all the ingredients coat the chicken well.

Leave it for 20-30 minutes. The yogurt acts as a tenderizer and makes the chicken soft and moist.

Now Grill

Heat the grill and drizzle vegetable oil. And place the marinated chicken.

Grill until both sides cooked well.

Serve with Indian cucumber raita or salad.

Ingredients

Tandoori masala powder

  • 2 stick cinnamon
  • 2 teaspoon cloves
  • 2 teaspoon mace
  • 2 teaspoon black peppercorn
  • 2 tablespoon cumin seeds
  • 3 tablespoon coriander seeds
  • 6 black cardamom
  • 6 green cardamom
  • 2 teaspoon dry fenugreek leaves /kasuri methi
  • 2 tablespoon ginger powder
  • 2 tablespoon garlic powder

The marinade

  • 5 chicken breast
  • 1 tablespoon tandoori masala powder
  • 1 teaspoon red chili powder
  • 3 tablespoon yogurt / curd
  • ½ teaspoon salt

Instructions

Making Tandoori chicken masala spice mix

  • If you are using a readymade spice mix, proceed to the marinade step.
  • In a microwave safe plate, place all the ingredients listed for making the spice mix except, garlic powder and ginger powder.
  • And microwave for 1 minute until the spices turns warm.
  • Allow it to cool to the room temperature and grind to a fine powder.
  • Now mix well with garlic powder and ginger powder.
  • Store in an airtight container for later uses.

Make the marinade

  • In a mixing bowl, add chicken, tandoori powder, red chili powder, yogurt, and salt.
  • Mix thoroughly, so that the chicken breasts evenly coated with the masala we made.
  • Allow it to marinate minimum of 20 minutes.

Grill

  • Place the chicken in the preheated grill, cook both the sides, until the grill makes seen on both the sides.
  • Serve it with some raw salad, chopped vegetables.

Notes

Chicken thigh meat portion can also be used for this recipe. You may take a few minutes more to get cooked than chicken breasts
