Wish to make Vegetarian Stromboli at home? Then it means you are looking for a recipe to substitute your calorie-loaded restaurant's Stromboli.
These are the vegetarian version of Stromboli, which cuts down cheese and substitutes with lower-calorie cottage cheese. The good part is that it also does not compromise on the taste.

How to make:
1. Activate yeast as per the package instructions. I have added the active dry yeast to the ¼ cup of warm water with salt and sugar. And I allowed it to rest for 15 min when the yeast became fluffy.
Then add this prepared yeast to the all-purpose flour, olive oil, and remaining warm water. And Mix it gently. Sprinkle a little more water if the dough is tight. Then, cover it with a wet towel or cling paper and set aside.
2. Keep it resting for about one hour, or it doubles its size.
3. Chop onion, capsicum, and Paneer into small chunks. Sprinkle salt and add any of your favorite masala powder. And combine them gently.
4. Divide the kept-aside dough into equal portions(I made 2 portions). And using the rolling pin, spread them evenly like in this picture.
5. Keep the stuffing we have made with paneer, Capsicum, and onion lengthwise in the middle.
6. Close them by bringing together the ends of the rolled dough.
7. Slit the dough gently so that the veggies also get cooked. Bake them at 450°F for 10 min and later at 375°F for about 10-12 minutes until the dough is thoroughly cooked. Once cooked, remove it from the oven, allow it to cool for 5-10 min, and make them as slices.
8. Serve vegetarian stromboli along with tomato sauce.

Vegetarian Stromboli

- ½ cup cottage cheese or ricotta cheese-Paneer
- ¼ cup green pepper chopped
- ¼ cup onion chopped
- ½ teaspoon salt

- Keep it at rest for about one hour or it doubles up its size.
For the filling
- In a mixing bowl, add cottage cheese, green pepper, onion, and salt.
- And combine them well. And set aside.
The making
- Divide the kept aside dough into two equal portions.
- And using the rolling pin, spread evenly over the lengthwise.
- Keep the filling lengthwise in the in the middle.
- Close them by bringing together the ends of the rolled dough.
- Slit gently the dough, so that the veggies also gets cooked.
- Bake them at 450°F for 10 min and later at 375°F for about 10-12 minutes until the dough is thoroughly cooked.
- Once cooked remove from the oven and allow it to cool for 5-10 min and make them as slices.
- Serve vegetarian stramboli along with tomato sauce.
