Schezwan fried rice
Schezwan fried rice is a delicious Chinese dish with vegetables, garlic, and Szechuan sauce. Easy to make at home, it's the perfect way to enjoy the flavors of your favorite Chinese restaurant.
- 2 tablespoons vegetable oil - 2 tablespoons minced garlic - 1/4 cup julienne-cut cabbage - 1/4 cup julienne-cut carrot - 1/4 cup julienne-cut mushroom - 3 tablespoons Szechuan sauce (or more as required) - 2 cups cooked rice - 1/4 cup thinly sliced scallion
Heat vegetable oil in a pan, add minced garlic. Add thinly sliced cabbage, carrot & mushroom. Stir fry on high flame until veggies change color.
In the same pan, scramble the eggs with salt and crushed pepper until they are soft. Set aside.
Continue cooking until the sauce coats the vegetables and rice evenly. Garnish with thinly sliced scallions.
Serve the spicy Schezwan fried rice hot, and enjoy with ketchup or soy sauce.
1. Stir fry the vegetables in high heat to maintain their crunchiness and vibrant colors. 2. Use cooked and cooled rice for frying to prevent it from sticking together and becoming mushy.
