Bombay toast sandwich

Bombay toast sandwich is an easy and delicious Indian breakfast recipe. Made with green chutney, sliced vegetables, and whole wheat bread slices, it is a perfect meal for the entire family. Simply grill the sandwich and serve it hot with tomato ketchup or the leftover green chutney.

1 cup cilantro  3 green chili (adjust to your preference)  2 tablespoon lime juice  ¼ teaspoon chat masala  1 potato, boiled and sliced

½ onion,  peeled and sliced - ½ tomato,  sliced - ½ cucumber,  sliced - ½ green bell pepper / capsicum,  sliced - 4 whole wheat bread slices

Prepare the green chutney by blending cilantro, green chili, lime juice, and chat masala until smooth. Set aside.

Thinly slice the potato, onion, tomato, cucumber, and green bell pepper. Place a slice of bread on a board and spread the green chutney on it.

Layer the sliced vegetables on top of the chutney-covered bread, starting with potato, onion, cucumber, tomato, and capsicum. Top with another slice of bread.

Grill the sandwich until it has clear grilled marks. Serve immediately with tomato ketchup or the leftover green chutney.
