3 bell peppers  1 tablespoon canola oil  2 tablespoons minced garlic  ½ cup chopped onion  8 oz diced tomato  ½ teaspoon cayenne pepper

½ teaspoon cumin powder  15 oz chickpeas, drained and rinsed  ½ cup cooked rice  ½ teaspoon salt  2 tablespoons chopped cilantro

In a pan, heat oil and garlic. Add onion and cook until soft. Stir in tomato, cayenne, cumin, rice, chickpeas, and salt. Cook until liquid evaporates.
