4 cubenelle peppers or any long chili peppers 1 tablespoon vegetable oil 1 tablespoon garlic, minced 1/2 cup mushroom, sliced 1/2 cup corn 1 cup firm tofu, crumbled 1/2 cup spinach/chard, chopped 1 tablespoon soy sauce 1/2 teaspoon rice wine vinegar 1 teaspoon chili garlic sauce (adjust according to heat preference) Sriracha sauce (for serving)

INGREDIENTS

Preheat the oven to 350 degrees Fahrenheit. Cut the peppers in half and remove the seeds. Place them on a baking sheet and roast for 20 minutes until tender.
