Deconstructed Stuffed Peppers is an easy, one-pot meal made with ground turkey/beef, bell peppers, onions, garlic, tomatoes, rice, and cheese. It's a flavorful and satisfying weeknight dinner option.

4 bell peppers (any color), chopped 1 pound ground turkey or beef 1 medium-sized onion, diced 2 cloves garlic, minced 14 ounces canned diced tomatoes

INGREDIENTS

1 cup cooked rice (white or brown) 1 teaspoon salt ½ teaspoon black pepper 1 tablespoon Italian seasoning, divided 1 cup shredded cheddar cheese 2 tablespoons olive oil

Heat olive oil in skillet and sauté chopped peppers and onion until softened. Remove from pan.
