Egg bhurji recipe
Egg bhurji is a popular Indian scrambled egg dish made with onions, tomatoes, and a blend of spices. This easy recipe is a favorite among families for a delicious weekend breakfast. Serve hot with a garnish of cilantro.
1 tablespoon vegetable oil - 1/2 cup finely chopped onion - 1/2 cup finely chopped tomato - 1/2 teaspoon red chili powder 1/4 teaspoon coriander powder
1/4 teaspoon turmeric powder - 1 cup water - 1 teaspoon salt - 4 eggs - 1 tablespoon chopped cilantro (for garnish)
In a pan, heat 1 tbsp vegetable oil and saute chopped onion until pink and tender. Add chopped tomato and cook until mushy.
Add 1 tsp red chili powder, 1 tsp coriander powder, and 1/2 tsp turmeric powder. Stir and cook for a few seconds until fragrant.
Add water and salt, bring it to a boil, and cook until the gravy thickens. Crack open and add eggs. Cook until masala is combined with eggs.
Cook until the scrambled eggs are well combined with the masala. Garnish with cilantro and serve hot.
