Spring mix greens:  3 cups, Queso fresco: 2 tablespoons, Garlic (minced): 1 tablespoon, Jalapeno (minced): 1 tablespoon, Cilantro (minced): 1 tablespoon, Cumin powder: 1 teaspoon, Dijon mustard:  2 tablespoons

Prepare the Vinaigrette: In a small mixing bowl, add minced garlic, jalapeno, cilantro, cumin powder, salt, Dijon mustard, olive oil, lime juice, and salt. Whisk until smooth.
