Greek yogurt chicken Salad

Eat healthy with Greek Yogurt Chicken Salad. It's low-carb and keto-friendly. A satisfying meal that keeps you full!

6 chicken tenders,  1 teaspoon paprika,  1 teaspoon cayenne pepper,  1 tablespoon lemon juice,  1 teaspoon salt,  1 cup Greek yogurt, 1 tablespoon mint leaves, minced


¼ teaspoon salt (for dressing), 1 cup spring mix,  ½ cup cauliflower florets,  ½ cup cucumber, chopped,  ½ cup carrots, chopped


Marinate chicken tenders with paprika, cayenne pepper, lemon juice, and salt for 30 minutes. Cook until evenly cooked. Slice into bite-sized pieces. In a small bowl, whisk Greek yogurt, minced mint leaves, and salt for dressing.



Wash and rinse all the vegetables and chop them. In a mixing bowl, add all the chopped vegetables. Toss spiced chicken bites. Then add the Greek yogurt dressing. Serve immediately. Enjoy this skinny, Paleo, Keto-friendly salad.
