Indian egg fried rice

- 1 teaspoon vegetable oil (for cooking the egg) - 1 egg - 2 tablespoons vegetable oil (for making the rice) - 1 tablespoon minced garlic - 1 cup cooked and refrigerated rice

- 1 cup shredded cabbage - ¼ cup Julienne cut carrot - ¼ cup Julienne cut green bell pepper - 1 teaspoon whole black pepper - 2 tablespoons chopped green onion (for garnishing)

Heat pan with 1 tsp vegetable oil. Crack egg into pan. Whisk until soft scrambled, then set aside.

In the same pan, add 2 tablespoons of vegetable oil and minced garlic. Saute until fragrant, then add shredded cabbage, carrot, and green bell pepper. Stir fry until half cooked.

Add 1 cup of cooked rice to the vegetables and toss until well combined. Next, add the scrambled egg and toss for another minute.
