Indian quinoa salad

Indian Quinoa salad is a delicious and flavorful dish packed with fresh ingredients like tomato, cucumber, carrot, and radish. The tanginess of lemon juice and the spiciness of green chili pepper give it an extra kick. Easy to make and perfect for a healthy and satisfying meal.

- 1 cup quinoa - 2 cups water - ½ cup chopped tomato - 1 cup chopped cucumber - ½ cup chopped carrot - ½ cup chopped radish - 1 green chili pepper, chopped - 2 tablespoons lemon juice - ½ teaspoon salt

INGREDIENTS

Rinse quinoa until water is clear. Add water to a saucepan and bring to a boil. Add quinoa and cover. Simmer for 18-20 minutes, stirring occasionally.
