Instant pot potato curry

Instant pot potato curry is a quick and flavorful dish made with tender potatoes in a spicy tomato-onion sauce. With minimal effort, it is ready in just 15 minutes and is perfect for busy weeknight dinners. Garnish with cilantro and serve hot as a side dish.

1 ½ cup Potato,  peeled - ½ inch Ginger  1 pod Garlic  2 tablespoons Vegetable oil  ¼ teaspoon Cumin seeds - ¼ cup Onion

2 Serrano peppers, stilted  ½ cup Tomato, roughly chopped - 1 teaspoon Red chili powder - ¼ teaspoon Turmeric powder - 1 cup Water - 1 teaspoon Salt - 2 tablespoons Cilantro, chopped for garnishing

INGREDIENTS

Cut potato into wedges. Crush ginger and garlic. Set aside. Set Instant Pot to 'Sauté' mode. Add oil and cumin seeds. Sauté until spluttering.

Add onion and sauté until translucent. Add ginger, garlic, and serrano peppers. Sauté for 30 seconds. Then add tomato and sauté until soft.

Add red chili powder and turmeric powder. Sauté for 20 seconds. Add water, salt, and potato wedges. Close lid. Set Instant Pot to 7 minutes.

After cooking, wait for 10 minutes to release pressure. Open lid, mash 25% of the potato to thicken curry. Transfer to serving bowl, garnish with cilantro, and serve hot.
