Jalapeno coleslaw

Spicy and tangy, this jalapeño coleslaw is the perfect accompaniment to tacos and fried chicken. Made with shredded carrots, white and red cabbage.

1 cup shredded carrot 2 cups shredded white cabbage 2 cups shredded red cabbage 1-2 jalapeños, finely chopped (seeds and ribs removed or reserved, as desired) 1 cup Greek yogurt

2 tablespoons lemon juice 1 teaspoon onion powder 1 teaspoon garlic powder 2 tablespoons maple syrup Salt to taste

Shred the carrot, white and red cabbage, and finely chop the jalapeños. Remove the seeds and the white membrane of the jalapeno.

In a large mixing bowl, whisk together Greek yogurt, lemon juice, onion powder, garlic powder, maple syrup, and salt until creamy.

Add the shredded carrot, white cabbage, red cabbage, and chopped jalapeño to the dressing. Stir gently until combined.
