Jalapeno Nachos

These addictive jalapeno nachos are easy to make and perfect for game-day or entertaining. Made with a creamy corn cheese sauce and topped with fresh jalapeno slices.

1 jalapeno (remove the seeds and pith)  2 tablespoons unsalted butter 1 tablespoon minced garlic  3 tablespoons all-purpose flour  1 cup whole milk

1/2 cup cheddar cheese (shredded)  1/2 cup corn  3/4 teaspoon taco seasoning (or chili powder) 6 oz tortilla chips

Cut the jalapeno in half and remove seeds and pith.

In a skillet, melt butter, add garlic and jalapeno. Stir until garlic slightly changes color. Add flour, then milk, cheese, corn, and taco seasoning. Stir until cheese melts.

Arrange tortilla chips on a plate. Pour creamy corn cheese sauce over chips. Garnish with fresh jalapeno slices.
