Jalapeno Peanut Brittle
Ready for a sweet and spicy treat? Try this Jalapeno Peanut Brittle - it's crunchy, tasty and has a spicy kick!
1 cup Sugar; 1/2 cup Light Corn Syrup; 1/4 tsp Salt; 1/4 cup Water; 1 cup Peanuts; 2 tsp Butter; 1 tsp Baking Soda
2 Jalapenos, finely chopped; Non-stick cooking spray
Start by mixing sugar, corn syrup, salt, and water in a pan. Cook over medium heat until sugar dissolves.
Stir in peanuts and jalapenos, and keep cooking until the mixture turns a golden color.
Remove from heat, quickly stir in butter and baking soda.
Pour the mixture onto a baking sheet coated with non-stick spray. Let it cool and harden.
Don't overcook the sugar mixture. It should be golden, not dark. Also, work fast once you add baking soda.
