Madras curry powder

Spice up your meals with homemade Madras Curry Powder! It's super easy to make and tastes better than store-bought.

Ingredients 1.  4 tbsp Coriander Seeds; 2 tbsp Cumin Seeds; 1 tbsp Black Peppercorns; 1 tbsp Fenugreek Seeds; 2 tsp Mustard Seeds; 10 Dried Red Chilies; 20 Curry Leaves

Ingredients 2.  1 tbsp Turmeric Powder; 1 tbsp Ground Ginger; 1/2 tbsp Ground Cinnamon

Start by dry roasting the coriander, cumin, peppercorns, fenugreek, mustard seeds, red chilies, and curry leaves.

Keep stirring while they roast. When they smell really good, take them off the heat.

Cool them down and add turmeric, ginger, and cinnamon.

Grind everything together until it's a fine powder. Store it in a tight jar.

TIPS 1. Roast the spices on low heat to avoid burning. Grind the spices really fine for the best flavor.
