Mung bean curry

Dig into this tasty Mung Bean Curry! It's super yummy and perfect for vegans too.

2 cups Mung Beans;  1 Onion;  2 cloves Garlic;  1 tbsp Curry Powder;  1 tsp Turmeric;  1 tsp Cumin;  1 can Coconut Milk

Salt to taste;  Pepper to taste;  1 tbsp Olive Oil;  1 cup Vegetable Stock; Fresh Coriander for garnish

Then, mix in curry powder, turmeric, and cumin, and cook until it smells awesome.

Add the mung beans, coconut milk, and vegetable stock, and cook until the beans are soft.

TIPS 1.  Fresh spices give the best flavor. For a creamy curry, blend some beans before adding them in.
