Oven roasted peppers and onions

This oven roasted peppers and onions recipe is a quick and versatile dish that can be served as a topping or side dish. It only takes 25 minutes to make and can be stored in the fridge for up to four days or frozen for up to three months.

1 Red bell pepper   1 orange bell pepper   1 yellow bell pepper   1 large onion   1 tablespoon grape seed oil or olive oil   1 tablespoon apple cider vinegar (optional)   1 teaspoon red pepper flakes   ¼ teaspoon salt


Preheat the oven to 400 degrees F.



In a bowl, mix bell pepper and onion strips with 1 tbsp oil, 1 tbsp apple cider vinegar (optional), 1 tsp red pepper flakes, and ¼ tsp salt. Coat evenly.



Spread seasoned pepper and onion strips on a baking sheet. Bake at 400 degrees F for 20 minutes until edges shrink and turn golden brown.
