Pepper rasam

Pepper rasam, also known as Milagu rasam, is a traditional Tamil recipe made with black peppers and garlic. This spicy and flavorful dish is known for its medicinal values. It is prepared by grinding black pepper, cumin seeds, garlic, and tomato, and then sautéing the mixture with mustard seeds and urad dal. Tamarind juice, salt, turmeric powder, and coriander leaves are added and boiled until frothy. Serve this delicious rasam with white rice for a satisfying meal.

1 lime sized tamarind (about 1.5 inches in diameter)  3 cups water  3 teaspoons whole black pepper  1 teaspoon cumin seeds  4 cloves garlic  1 ripen tomato

INGREDIENTS

1 teaspoon vegetable oil  1/2 teaspoon black mustard seeds  1/2 teaspoon urad dal (skinless black gram)  1 pinch asafoetida  1 teaspoon salt (or as required)  1/4 teaspoon turmeric powder  2 tablespoons chopped coriander leaves

INGREDIENTS

Prep the ingredients by soaking tamarind, extracting juice, and grinding black pepper, cumin seeds, garlic, and tomato.

Heat oil in a pan and add mustard seeds, urad dal, and asafoetida. Let the seeds splutter, then add the ground mixture and sauté until thick.

Add tamarind extract, salt, turmeric, and coriander leaves. Bring it to a boil until frothy. Switch off the heat and cover.

Serve the pepper rasam with white rice.

1. Adjust spice levels to taste by increasing or decreasing the amount of pepper used.  2. Allow the rasam to simmer for at least 10-15 minutes for the flavors to meld and develop.
