Semiya kichadi

Semiya kichadi is a South Indian style vegetable upma made with roasted vermicelli. This quick and easy recipe is perfect for a weekend breakfast or a busy dinner. With aromatic spices, vegetables, and flavorful seasonings, it is delicious and satisfying. Serve with green chutney or tomato ketchup for a complete meal.

1 tablespoon vegetable oil  1 inch cinnamon   2 cloves   ¼ cup chopped onion   1 tablespoon minced ginger   1 tablespoon minced garlic    6 curry leaves

INGREDIENTS

2 green chili or serrano pepper,  slited  ¼ cup finely chopped carrot    ¼ cup green peas   2 cups water   ½ teaspoon salt or as required   ¼ teaspoon turmeric powder   1 cup roasted vermicelli or semiya

In a pan over medium heat, fry cinnamon and cloves until they change color and release aroma. Add chopped onion and fry until pink. Then add minced ginger and garlic, and fry until fragrant.

Add curry leaves and green chili. Fry for a minute. Add chopped green bean, carrot, and green peas. Close the lid and cook for 5 minutes on low heat.

Add water, salt, and turmeric powder. Bring to a boil on medium heat. Then add roasted vermicelli and cover with a lid. Cook on low heat for 10 minutes or until vermicelli is cooked well.

Serve semiya kichadi with green chutney or tomato ketchup. Enjoy for weekend breakfast or busy dinner.
