Spicy chicken pasta

Spicy chicken pasta with juicy, mildly hot chicken in a creamy yogurt sauce. Ready in under 30 minutes.

1 chicken thigh   1 tsp garlic powder   1 tsp cayenne pepper   1 tsp red pepper flakes   1 tbsp olive oil   1/2 tsp salt   6 ounces cooked pasta / 3 cups uncooked pasta   2 tbsp olive oil

INGREDIENTS

1 mediumsized onion,  roughly chopped  1 jalapeno pepper  10 oz diced tomatoes  1/2 tsp garlic powder  1/2 tsp cayenne pepper  1/4 tsp red pepper flakes  1 cup chicken stock  1/2 tsp salt  1/4 cup Greek yogurt  1 tsp ground cumin

Marinate the chicken: In a bowl, mix chicken thigh, garlic powder, cayenne pepper, red pepper flakes, olive oil, and salt. Let it marinate for 20 minutes.

Cook the pasta according to package instructions, then drain and set aside.

Cook the marinated chicken thigh in a heated skillet for 12-14 minutes until fully cooked. Transfer to a plate and cut into strips.

Make the sauce: Sauté onion and jalapeno, add diced tomatoes, spices, chicken stock. Cook until thickened. Add cooked pasta and chicken strips. Toss to coat. Garnish with cilantro. Enjoy!
