2 tablespoons freshly minced garlic ¾ teaspoon red pepper flakes (adjust to taste) 3 tablespoons low-sodium soy sauce 1 teaspoon rice wine vinegar (or substitute Mirin) 2 tablespoons chili garlic sauce (or store-bought Szechuan sauce) 8 oz noodles (Udon, Hakka, Ramen, or spaghetti pasta) 2 tablespoons sesame oil ¼ teaspoon red pepper flakes for garnish
