Spicy Pineapple Jam

2 cups pineapple ½ cup jalapeno ½ cup sugar 1 tablespoon lemon juice
Prep the ingredients. Remove pineapple skin, cut into chunks. Remove jalapeno's seeds, white membrane, and cut into small pieces. Reserve the seeds.
Blend pineapple chunks, jalapeno pieces, sugar, and lemon juice until smooth. Taste and adjust sugar and jalapeno seeds according to preference.
Cook the mixture over medium heat until it becomes mildly thick. Be aware that it thickens slightly when cools down. Adjust consistency as needed.
Serve as a spread, topping, or however you prefer. Refrigerate leftovers in an airtight container for up to seven days.
TIPS Use fresh pineapple for the best flavor. Adjust the heat by adding or removing jalapeno seeds. Cook until mildly thick, as it will thicken more when cooled
