Spicy ramen noodles recipe: Easy vegan Chinese dish ready in under 30 minutes. Blanch edamame, broccoli, and zucchini. Cook ramen noodles, add soy sauce, chili garlic sauce, and veggies. Garnish with spring onions. Serve hot.
1/2 cup shelled edamame - 1 cup broccoli florets - 1/2 cup zucchini slices - 2 cups water or vegetable broth
1 ramen noodle package - 1 tablespoon soy sauce - 1 tablespoon chili garlic sauce 2 tablespoons chopped green onion
Blanch the edamame, broccoli, and zucchini by boiling until tender. Set aside.
In a pot, cook the ramen noodles in 2 cups of water or vegetable broth as instructed on the package.
Once the noodles are cooked, switch off the flame and add soy sauce and chili garlic sauce.
Finally, add the blanched vegetables, garnish with spring onion, and serve hot.
1. Don't overcook the noodles; they should be al dente. 2. Adjust spice level to taste by adding more or less chili powder.
