Spring dosa

Spring Dosa is a delicious Indian-Chinese fusion dish made with a fermented crepe filled with stir-fried vegetables. It's the perfect blend of flavors and textures, with a crispy outer layer and a flavorful vegetable filling. Enjoy this unique and tasty dish for breakfast or as a snack.

- 1 teaspoon vegetable oil (for the filling) - 1 tablespoon minced garlic - ½ cup shredded cabbage - ¼ cup julienne cut carrots - ¼ cup julienne cut red pepper - ¼ cup julienne cut green pepper

- ¼ cup julienne cut yellow pepper - 1 tablespoon soy sauce - 1 tablespoon chili garlic sauce - ½ tablespoon rice vinegar - 1 cup dosa batter - 2 tablespoons vegetable oil or ghee (for drizzling)

Prepare the filling by sautéing garlic in oil. Add cabbage, carrots, and peppers. Cook until half done. Add soy sauce, chili garlic sauce, and rice vinegar. Saute until well coated.

Heat a flat griddle and pour ¼ cup of dosa batter. Spread evenly in a circular motion. Cook until the bottom is golden brown. Drizzle with oil.

Spread the prepared filling evenly over the dosa, roll it up, and cut it into two halves.

Serve the spring dosa immediately.
