1 cup pasta, cooked  1 cup sweet potato cubes  2 cups water  1 large tomato  2 tablespoons olive oil

1 tablespoon minced garlic - 1 cup almond milk - 1/2 teaspoon salt - 1/2 teaspoon crushed whole black pepper - 1/2 teaspoon red pepper flakes - 2 tablespoons chopped parsley

Wash, peel, and chop sweet potato into small cubes. Boil sweet potato cubes and tomato until soft. Strain and peel tomato skin. Blend both together.

Cook pasta and set aside. Saute minced garlic in olive oil. Add sweet potato puree and almond milk, bring to a boil. Cook until thickened.
