Tofu curry

A rich and flavorful Indian tofu curry made with firm tofu, onions, garlic, ginger, tomato paste, spices, water, and coconut milk. Serve with steamed rice or naan bread for a satisfying and delicious meal. Garnish with fresh coriander leaves for an extra touch of freshness.

1 block (14 ounces) of firm tofu, pressed and cut into cubes 2 tablespoons vegetable oil 1 medium-sized onion, finely chopped 1 tablespoon minced garlic 1 tablespoon grated fresh ginger 4 tablespoons tomato paste

1/2 cup freshly pureed tomato 1 teaspoon ground coriander 1/2 teaspoon red chili powder (or to taste) Salt to taste 1 1/2 cups water 1 cup canned coconut milk 2 tablespoons fresh coriander leaves (for garnish)

In a pan, fry tofu cubes until golden. Remove from pan and set aside.
