Tofu stuffed peppers

Tofu stuffed peppers are a deliciously spiced and meat-free dish. These peppers are stuffed with a filling of tofu, corn, and brown rice, then baked until tender. Perfect as an appetizer or vegetarian dinner. Enjoy with a side of ranch or spicy mayo for added flavor.

3 poblano peppers 1 cup tofu 1/2 cup corn kernels (thawed) 1/2 cup cooked brown rice 1 tablespoon vegetable oil 1/4 teaspoon salt 1/4 cup fire roasted tomatoes

INGREDIENTS

Roast peppers until lightly charred. Let cool, divide in half, remove seeds and ribs. Place halved peppers in tray.

Heat oil in a large pan, add tofu, corn, rice, salt. Simmer 2 min. Stir in diced tomato, cook 5 min.

Scoop the filling into the pepper halves. Bake at 350°F for 15 minutes or until peppers are soft. Broil for 3-5 minutes for a nice finish.
