Vegetable Jalfrezi

Vegetable jalfrezi is a delicious Indian side dish made with a medley of roasted vegetables in a spicy gravy. It's a quick and easy recipe that can be prepared in under 30 minutes. Perfect to serve with naan or rice.

1 teaspoon vegetable oil  ½ cup cauliflower florets  ¼ cup red peppers, sliced  ¼ cup green peppers, sliced  ¼ cup yellow peppers, sliced  3 tablespoons vegetable oil   ½ cup onion, finely chopped

1 tablespoon ginger garlic paste  ½ cup tomato fresh puree  1 tablespoon red chili powder 1 teaspoon coriander powder ¼ teaspoon turmeric powder  1 teaspoon salt  2 cups water  1 cup paneer, sliced lengthwise  1 tablespoon kitchen King masala /Garam masala

INGREDIENTS

Roast vegetables by heating oil, add cauliflower and bell peppers. Cook for 4-5 minutes until half cooked. Set aside.

In the same pan, heat oil and sauté onions until soft and pink. Add ginger-garlic paste and tomato puree. Sauté until oil separates. Add spices and sauté for 1 minute.

Add water and boil for 10 minutes until gravy thickens. Then, add paneer and roasted vegetables. Mix well until paneer is coated with masala.
