The spicy plantain chips made with coconut oil is excellent for snack perfect to munch on any time including parties. A very addictive snack also this is a vegan, dairy free recipe.
Wash and peel the plantain. Using mandolin make thin even slices.
Keep the slicer just above the hot oil, start slicing it. Make sure that the slices fall directly into the hot oil. Do not overcrowd the oil with the slices.
Turn the stove to medium flame. Stir them occasionally.
Make salt water by dissolving ½ teaspoon of salt to 2 tablespoon of water
Add half a teaspoon of salt water to the pan.
Fry Plantain Chips in slower flame further, till chips becomes stiffer and crispier. Store them in room temperature in airtight container.
Fry till the plantain slices start getting crisp and firmer.
Drain the oil well, and place them in the kitchen towel to absorb the excess oil.
In a large mixing bowl, add the fried chips and ground black pepper. Toss until the pepper coats the chips evenly.
