Ingredients

  • 1 Cup All Purpose Flour / maida
  • 3 tbsp Semolina / rava
  • 1/2 tsp Carom Seeds
  • 2 tsp Black Cumin seeds
  • 2 tbsp Ghee
  • 1/2 tsp Salt or as required
  • Luke warm water
  • 2 Cups Cooking Oil For Frying

Instructions

  • Combine maida, rava, salt, carom seeds, black cumin, ghee well, so that every part of the flour incorporated with ghee, which I consider most important step here in this recipe. So take at least few minutes to combine by smashing the lumps formed by the ghee, when added to the flour.
  • Sprinkle little water at a time to form the smooth and stiff dough. Then keep it aside for half and hour. Then divide the dough into equal sized portions. Roll and spread out each portion like roti. Cut into symmetrical shape as desired, I went with square shape. See in this picture, after cutting the dough, the shape is perfect and does not swirl.
  • Heat oil in a heavy bottomed pan, when it becomes hot, fry square-shaped dough in high flame for 2 minutes and in medium flame till it becomes golden brown in color and no sizzling sound. Flip the sides, occasionally, fry them in batches. Strain and keep it over kitchen towel, to remove excess oil.
