Ingredients
For the filling

Instructions
For the filling
Over medium heat, place a pan. Add 2 teaspoon of vegetable oil and cumin seeds. And wait till cumin seeds tunr golden brown.
Then add mashed potatoes, add green peas, cumin seeds, red chili powder, garam masala, chopped cilantro, and salt.
Once cooled, divide them into equal small sized balls.
For the dough
In a mixing bowl, add all purpose flour, cumin seeds, carom seeds, vegetable oil, and salt.
Combine and rub the flour well, so that oil gets incorporated well into every particle of the flour.
Add water and knead to a smooth dough.
Set aside for one hour.
For frying
Divide the dough into equal small portions and roll out into small 6 inch diameter circles.
And place a potato filling balls in the center. Carefully bring all the edges of the flour to the center.
Press gently, with even pressure, where all the dough got together. And gently pull out the external frilled dough, like one in this picture.
Repeat the same procedure for the remaining dough. And keep everything ready.
Over medium heat, place frying pan. Add the vegetable oil.
Once the oil becomes hot, slide prepared potli samosa one after the other.
Deep fry them in hot to medium flame. Once the sizzling sounds slow down and the bags turned into golden brown, remove it from the oil.
Place them in the kitchen towel, to remove excess oil.
Serve hot.
