- 2 Cup All purpose Flour
- 3/4 Cup Sugar
- 3 Eggs
- 2 Banana ripen
- 1/4 Cup Cooking Oil
- 1/4 tsp Ground Cinnamon
- 3/4 tsp Baking Soda
- 3/4 tsp Baking Powder
- 1 pinch Salt
Preheat oven for 350°F. Grease and dust the baking tray.
Take to 2 ripe bananas.
Using fork gently mash the banana. It is ok if there are little smaller chunks.
In a mixing bowl, add eggs and beat it until it becomes frothy.
Then add all-purpose flour, baking powder, baking soda, sugar, vegetable oil, and salt. Gently fold the batter and combine them well. Then add mashed banana and again give it a gentle fold.
Add 3/4th Cup of fresh blueberries to the batter and reserve 1/4th cup of berries for the topping purposes. Give it a gently fold one more time, so that berries spreads evenly to the batter.
Then pour the batter in the lined/greased and dusted baking tray. Drop the remaining blueberries over the top.
In 350°F for about 30 minutes or until the inserted toothpick comes out clean.
