oats

vegetable oil

black mustard seeds

urad dal
/skinless black gram

chana dal
/split chickpea

yogurt
/curd

Instructions
For prepping
In a pan add oats and fry them for 2 minutes in medium flame.
Grind them coarsely and keep it aside.
For the batter
In a pan, add vegetable oil, black mustard seeds, urad dal, chana dal, asafoetida, and curry leaves.
Fry them until mustard splutters and the dal changes its color.
Add semolina(sooji) and fry again for 2 minutes.
In a mixing bowl, add this mixture, ground oats, yogurt, salt, and water.
Rest it for 10 minutes.
Now add Eno salt and give a gently stir.
For cooking
Grease the idli moulds and pour the batter equally and evenly.
Steam it for 10-12 minutes or until it cooked perfectly.
Serve hot with coconut chutney, sambar.
