Vendakkai puli Kuzhambu, is a traditional South Indian recipe meaning okra cooked in the tamarind sauce. A simple everyday dish in the South Indian homes.
Chop onion and tomatoes finely and keep them ready.
Soak tamarind in 1 cup of water for 20 minutes. And extract the juice.
For seasoning
Heat oil in the pan, add mustard seeds, urad dal, and fenugreek seeds. Wait until mustard gets splutter. Once mustard starts making the crackling sound, add chopped onion and fry until onion becomes soft and translucent.
The making
Then add okra pieces. In medium flame, fry the okra pieces, until the leaves outs its slimy, sticky property, and starts becoming stiff and crisp.
Add Chopped tomatoes.
Continue to saute them until they turn slightly mushy. Remove from the fire and keep away for while.
Add red chili powder, coriander powder, turmeric powder. Saute for a minute.
Add tamarind extract and 1 cup of water and bring it to boil.
When the okra is 90% done, add ground coconut mixture. And cook for 4 minutes in medium heat.
