Sorakaya curry, a South Indian delicacy made with bottle guard and tamarind. So obviously it tastes sour and perfectly pairs up with Sambar, dal, and curd rice.
Dry roast red chili, coriander seeds, grated coconut, skinless black gram(urad dal) and asafoetida till all the ingredients become golden brown. Keep it aside.
Grind dry roasted ingredients and grated coconut along with little water. Make a smooth paste and keep it aside.
Extract tamarind to the thick pulp and keep it ready.
Remove the seeds and cut bottle guard into small pieces.
Heat the vegetable oil in the pan, add mustard seeds and skinless blackgram(urad dal). Allow mustard seeds to splutter. Add curry leaves and saute for a minute.
Then add a cup of water, chopped bottle guard, turmeric powder, curry leaves and salt. And bring it to boil, cook it till veggie becomes soft and tender. Then add tamarind extract cook for about 5 minutes. Once tamarind leaves its raw smell, add kept aside ground masala.
All it to cook for another 4-5 minutes in simmer flame.
Serve hot with steamed rice, sambar rice or any authentic mixed kinds of rice.
