Searching for soft Idli recipe? There are tons of Idly recipes around the web. This is the most reliable recipe which I'm following more than a decades time very successfully.
Over medium heat, place the idli maker's bottom pan.
Add 3 cups of water to the pan.
Place the idli mold, and spread clean, wet cotton cloth.
Use hands to set the cloth fit into the mold properly.
And gently pour Idli batter and fill the mold in the slots evenly.
Close the lid. And cook for 7-10 minutes or until the center of the idli is cooked throughly.
Open the lid. Carefully lift the idli mold plate and flip it over a plate to unmold the idli.
Sprinkle cold water over the cotton cloth(to make the idli separated from the cloth very easily).
Carefully remove the cotton cloth, like peeling a banana.
Enjoy your idli with chutney.
Notes
1. If you are using the greasing type of Idly molds, allow them to the room temperature before removing soft and spongy idli. 2. Always be careful of the hot steam while removing molds from the steaming pan.
