sweet potato pasta sauce
Sweet potato pasta sauce is incredibly delicious. Healthy, quick food for a busy weeknight dinner. A vegan, vegetarian, dairy-free and more room to customize to suit your diet. This dish is made with sweet potato, olive oil, garlic, crushed red pepper, and parsley.

Servings 2 servings
- 1 cup sweet potato cubes
- 1 tomato large
- 2 tbsp olive oil
- 1 tbsp garlic minced
- 1 cup almond milk
- 1 cup pasta cooked
- 1/2 tsp salt
- 1/2 tsp black pepper crushed
- 1/2 tsp red pepper crushed / flakes
- 2 tbsp parsley chopped
- 2 cup water
Cook pasta as per package instructions.
Wash and rinse sweet potato. Peel the skin and chop into small size cubes.
Bring 2 cups of water to boil. Add tomato and sweet potato cubes.
Cook them until softens.
Strain and peel of the tomato skin.
In a blender puree until it is smooth and silky.
Heat olive oil in a pan.
Add minced garlic and saute until it is fragrant.
Add sweet potato puree and almond milk. And bring it to boil.
Cook until it thickens.
Add salt, crushed red pepper, black pepper, and chopped parsley.
Stir and combine until pasta is well coated with the sauce.
And serve hot.
You may substitute almond milk with the milk of your choice.
Use whole wheat or multigrain pasta to make the dish more nutrient.
Add in more steamed vegetables if you prefer.
