Ginger Lemon Honey Tea

Ingredients
2
cups
water
2
inch
fresh ginger root
peeled and thinly sliced(See Notes 1&2)
2
teaspoons
honey
or to taste(See Notes 3)
1
tablespoon
lemon juice
1
cinnamon stick
optional
Instructions
In a small pot, combine the water and ginger slices.
Bring to a boil, then reduce the heat to low and let it simmer for 10 minutes.
If using, add the cinnamon stick to the pot during the last few minutes of simmering(to infuse extra flavor).
Remove the pot from the heat and strain the tea into a mug, and discard the ginger and spices.
Stir in the lemon juice and honey, adjusting the sweetness to your liking.
Sip the tea while it's still hot or transfer to the refrigerator and drink as chilled.
Notes
Use fresh ginger root; peel with the back of a spoon for easy prepping.
Adjust heat by reducing ginger or adding more honey for balance.
Substitute honey with agave nectar, maple syrup, or brown sugar.
Store in the refrigerator for up to 3 days or freeze for 3 months.
Reheat gently on the stovetop or microwave, stirring to prevent burning.
