Adjust heat by reducing chili powder, cayenne, and black pepper for a milder version.
Pat the turkey dry; coat the turkey evenly with olive oil or melted butter. Then, generously rub the spice mixture(including under the skin and inside its cavity).
Marinate the turkey for at least 8 hours or overnight for the best flavor.
Roast, smoke, or grill the turkey as desired.
Store the leftover rub in an airtight container in the fridge for up to 2 weeks or freeze for up to 6 months.
