Instructions
Preheat oven to 400°F and line a baking sheet with parchment paper.
In a large bowl, add lima beans with olive oil, smoked paprika, garlic powder, ground cumin, cayenne pepper, and salt.
Toss until the beans are evenly coated with the spice mix.
Then spread the spice coated lima beans in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until they’re golden and slightly crispy.
Remove from the oven, sprinkle with fresh parsley if needed, and enjoy warm.
Notes
Adjust heat levels by controlling cayenne pepper or adding crushed red pepper for extra spiciness; omit cayenne for a milder snack.
For best results, monitor the baking process closely, as oven temperatures may vary, and avoid over-roasting.
Store leftovers in an airtight container at room temperature for up to 2 days; reheat in the oven or air fryer to restore crispiness.
