I fell in love with roasted Shishito peppers after trying them at an Asian restaurant.

Luckily, our local store in central Pennsylvania carries them throughout the summer and sometimes in winter.

Now, I pick them up almost every time I shop, and this oven-roasted Shishito recipe has become one of our favorites!

Ingredients

  • Shishito peppers: These peppers usually taste sweet and mild. But every pepper is different, even from the same plant. So always be cautious that some peppers may taste slightly hot.
  • Kosher salt: Compliments and enhances the flavor of the roasted Shishito peppers. You can substitute it with sea salt or rock salt.
  • Olive oil: This provides an earthy taste. For subtle flavors, you may choose light olive oil or vegetable oil.

How To Make Roasted Shishito Peppers?

  • Preheat the oven to 450 degrees Fahrenheit. Set the rack in the middle of the range.
  • Wash and rinse the shishito peppers thoroughly.
  • Place them on the baking tray or an oven-safe pan. Drizzle olive oil over them and toss until the peppers are coated evenly.
  • Sprinkle kosher salt.
  • Bake the peppers for approximately 7 minutes or until it starts blistering.
  • Remove them from the oven, and serve with any spicy sauce.

♨️How To Adjust The Heat?

Roasted shishito peppers have a smoky, slightly sweet flavor without much heat. But at times (maybe one out of 10 shishito peppers), they may have a spicy kick and heat.

Try serving with a cool dipping sauce to balance the flavors.

Top Tips

Shishito peppers are sweet and do not hold much heat in their seeds, like bell peppers. Hence, you do not need to remove the seeds or the ribs.

How To Serve?

  • As an appetizer, Serve with a spicy dipping sauce like this spicy garlic aioli.
  • As a side: Enjoy with steak, barbequed meat, grilled chicken, or salmon.
  • As a topping, add a layer to your burger sandwiches or throw them in a salad like this fiesta salad.

FAQ

Can I store the leftovers?

This roasted shishito pepper swells when hot and flattens when cooled. Hence, it's best to serve immediately.

How to roast the shishito peppers over the stovetop?

Follow the same recipe, but instead of placing them in the oven, sauté them on medium heat for about 7 minutes or until they turn pale and blister. Sprinkle some salt and enjoy.
